Air Baked Whiting and Roast Veggie Couscous

Crispy Air Baked Southern Blue Whiting is complemented with roast veggies and a herb couscous.

Ingredients

  • 380g packet frozen Birds Eye Air Baked Southern Blue Whiting
  • 500g packet Coles Roasting Vegetables
  • ¾ cup Coles Greek Style Natural Yoghurt
  • ¼ cup chopped fresh parsley leaves, plus extra for sprinkling
  • ¾ cup Coles Couscous, cooked following packet directions

Method

STEP 1
Arrange frozen Birds Eye Air Baked Whiting on a baking paper lined tray. Spread roasting vegetables on a separate tray and cook both trays in a preheated oven at 200°C for 18-20 minutes until fish is golden and veggies are fully cooked through.
STEP 2
Meanwhile, combine yoghurt with ½ the parsley and season to taste.
STEP 3
Gently toss cooked couscous with roasted vegetables and remaining parsley. Top with cooked fish and serve with herb yoghurt.
Tips
Try tossing veggies with a teaspoon of your favourite spice such as cinnamon, cumin or smoked paprika before cooking.
