Mediterranean Style Pita Pockets

These pita pockets are the perfect balanced snack - filled with fresh yoghurt, flavourful kidney beans and salmon.

Ingredients

  • ¼ cup Coles Greek Style Yoghurt
  • 1 pita pocket, cut in half and lightly toasted
  • 1 cup Coles Baby Rocket Leaves
  • 95g can John West Salmon Tempters - Tomato & Onion, drained
  • 70g can Edgell Snack Time Red Kidney Beans with Chilli & Olive Oil

Method

STEP 1
Spread yoghurt evenly on the inside of each toasted pita half.
STEP 2
Fill pitas with rocket leaves, John West Salmon and Edgell Red Kidney Beans.
