Mediterranean Veggies with Greek Style Chicken

Crisp potato slices, onion, charred zucchini, and cherry tomatoes make the perfect accompaniment to Greek style chicken.

Ingredients

  • 600g packet frozen Birds Eye Seasoned Sides – Mediterranean
  • 1 tablespoon Greek oregano
  • Freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • 4 small chicken breast fillets
  • Lemon wedges, for serving
  • Fresh parsley leaves, for garnish

Method

STEP 1
Cook frozen Birds Eye Seasoned Sides following oven bake packet directions.
STEP 2
Meanwhile, season chicken with oregano and pepper. Heat oil in a large non stick frypan over medium heat and cook chicken until golden and fully cooked, turning as required. Remove from heat and rest for a few minutes.
STEP 3
Serve cooked vegetables and chicken with lemon wedges. Garnish with parsley.
Tips
Seasoned Sides can alternatively be pan fried, following cook top packet directions.
