Nori Wrapped Trout with Ponzu Dressed Soba Noodles

The delicate flavour of trout is perfect with Japanese seasonings.

Ingredients

  • 1 sheet nori seaweed
  • 500g packet frozen I&J Norwegian Trout Fillets - Skin On, thawed
  • 180g soba noodles
  • 1 small red capsicum, julienned
  • 1 cup julienned snow peas
  • 2 spring onions, julienned
  • Toasted sesame seeds, for garnish
Dressing:
  • 1 tablespoon mirin
  • 2 tablespoons rice wine vinegar
  • ⅓ cup ponzu
  • 2 teaspoons sesame oil
  • 1 teaspoon finely grated fresh ginger

Method

STEP 1
Cut nori sheet into 4 x 6cm wide strips and wrap around thawed I&J Trout Fillets sealing ends with a little water. Place on a baking paper lined tray and cook following thawed packet directions.
STEP 2
Meanwhile, cook soba noodles following packet directions. Drain and toss with capsicum and snow peas.
STEP 3
Combine dressing ingredients in a screw top jar and shake well. Pour over noodles and gently toss.
STEP 4
Place noodles and vegetables on serving plates, top with cooked trout and garnish with spring onion and sesame seeds.
Tips
To curl the julienned spring onion, place in iced water for 2-3 minutes.
