Salmon and Olive Pasta

Adding John West Sockeye Salmon to an easy olive oil pasta, takes it over and above the ordinary. Delicious both warm or serve it cold as a salad!

Ingredients

  • 100g shell pasta
  • 90g can John West Sockeye Salmon in Oil, oil reserved
  • ¼ cup Ligurian or small Kalamata olives
  • 1 clove garlic, sliced
  • ¼ cup semi dried tomatoes
  • Fresh basil leaves, for garnish
  • Finely shredded parmesan, for serving

Method

STEP 1
Cook pasta following packet directions.
STEP 2
Heat reserved tuna oil in a non stick frypan over medium heat. Add olives, tomatoes and garlic. Cook for 3-4 minutes, until garlic has softened.
STEP 3
Add John West Salmon, pasta stir gently to combine.
STEP 4
Serve garnished with basil leaves and sprinkled with shredded parmesan.
