Ingredients
- ½ cup snow peas, sliced lengthwise
- ¼ cup fresh mint leaves, chopped
- ½ cup fresh coriander leaves, roughly chopped
- 1 small fennel, thinly sliced
- 1 small head oak leaf lettuce
- 1 long green chilli, sliced
- 360g packet frozen I&J Salt & Pepper Calamari
- ⅓ cup Vietnamese dressing

Method
STEP 1Combine snow peas, herbs, fennel and lettuce leaves in a large bowl and toss to combine. Chill.
STEP 4
Cook frozen I&J Calamari following packet directions.
STEP 3
Serve salad topped with calamari, drizzled with ½ the Vietnamese dressing. Serve remaining dressing on the side.
Tips
Spice the salad up with extra chilli.
