Sundried Tomato Pesto Pasta

Feed the family with this flavour packed sundried tomato, bacon, capsicum and mushroom pasta.

Ingredients

  • 400g Coles Spaghetti
  • 2 tablespoons Coles Extra Virgin Olive Oil
  • 4 rashers Coles Rindless Short Cut Bacon, diced
  • 500g punnet Coles Sliced Mushrooms
  • 1 medium red capsicum, sliced
  • 190g jar Leggo’s Pesto – Sundried Tomato

Method

STEP 1
Cook pasta following packet directions. Drain and return to hot saucepan.
STEP 2
Meanwhile, heat oil in a large frypan. Add bacon, mushrooms and capsicum. Cook for 4-5 minutes or until bacon begins to caramelise, stirring occasionally.
STEP 3
Stir Leggo’s Pesto and cooked bacon and vegetable mix through hot pasta. Serve.
Tips
Garnish with shaved parmesan and fresh basil before serving.
