- 4 cups baby rocket leaves
- 8 mini roma tomatoes, sliced
- 2 baby cucumbers, sliced
- ½ red onion, thinly sliced
- Salad dressing of choice, for drizzling
- Lemon wedges, for garnish

Combine salad ingredients and drizzle with dressing.
STEP 4
Serve veggie chips with salmon and salad. Garnish with lemon wedges.
